The Fossalon asparagus is a highly prized ingredient of certain traditional specialties specific of the local cuisine of Grado. Its smoothness has often been acknowledged, and given its gastronomic merits, an entire festival is dedicated to the Fossalon asparagus. Mostra degli Asparagi is usually held between later April and early may, and it consists of an entire array of opportunities to test how this species of white asparagus accompanies the reputed traditional dishes of Grado, as well as the best wines of Friuli Venezia Giulia.
